SEASON'S GREETINGS...

The tradition of sending Christmas cards is falling out of favor with the rising cost of postage, the advent of social media, email, and instant photo-sharing. This trend makes the cards that one is lucky enough to receive a real joy. One of my favorite "Season's Greetings" comes from the heart and mind of good and long-time friend - Fr. Jim Friedel, OSA - former pastor of Chicago's St. Clare of Montefalco Parish where we met many years ago. I trust that he won't mind if I share the gift of his words in this excerpt of what Fr. Jim has to say at this most wonderful time of the year:

A Most Blessed Christmas . . .

... to Pope Francis, who wants us to have the smell of sheep on our hands... we thank you for your example, your compassion and your faith in Christ.
... to the poor, the hungry, the homeless and the hopeless... the first ones He asked us to care for.
... to the people of the Philippines, the Jersey Shore and other storm-devastated areas... we pledge our prayers and effort to help you recover.
... to those who think we cannot survive without automatic weapons in our homes... may the tears of the survivors of these mass shootings wash over you.
... to the people of Syria and the Middle East, especially the children... may the peace you so rightly long for be yours.
... to the millions of uninsured and those who live in fear of catastrophic illness, may there be an affordable way to care for you and ease your fears.
... to Pope Emeritus Benedict... our gratitude for knowing when to retire for the sake of the Church.
... to those who have died this past year... to that giant of a man, Nelson Mandela, aptly named Madiba, "Father"... to that Iron Lady, Margaret Thatcher... to those who made us laugh and entertained us: Jonathan Winters, Esther Williams, Patti Page, Annette Funicello... and film critic, Roger Ebert... may you all rest in peace.
And to those who read this... A Most Blessed Christmas: May you grow in the awareness of His birth deep within you... and like Mary may you carry His presence to those in need... in the Peace He came to share.

EVERLAND FARM TERIYAKI JERKY
is a holiday tradition Everett undertakes to create a seasonal treat we've enjoyed gifting for many years. The possum has come to be our trademark image, but it's just to mess with y'all.
Everland Farm Teriyaki Jerky is all beef prepared in a marinade of Kikkoman Teriyaki and Worcestershire sauces, infused with some of our homegrown Music garlic and seasoned simply with black pepper. The aroma of "jerky-to-be" is something one grudgingly acquires a tolerance for in December at Everland Farm. 30 pounds of bottom round steak is trimmed, marinated, and generously seasoned with kosher salt and ground black pepper - before spending days in a dehydrator - to yield approximately 12 lbs. of jerky.
Ev's recipe has evolved over the years with special thanks to son, Rob, who once asked, "Have you ever made Teriyaki Jerky?" If you like jerky but consider it impossible to chew just tear a small piece off and chew it slowly.
