Locally grown garlic of proportion in size and flavor evolves over time. On the left is a sample of our 2012 harvest - 5 years in growing garlic this size - compared with the planting stock in the right-hand pic that we occasionally purchase to increase our planting for the next season.

"Music" will bring its uncompromised natural fresh flavor and aromatics to the finest of your recipes - up to a year under recommended storage conditions. We've received - and smiled at - favorable requests for our "elephant garlic." Everland Farm's "Music" Garlic is NOT elephant garlic. It's our locally grown variety of the wonderful "Music" variety. It may grow here to the size of elephant garlic but you'll taste the difference with your first experience of "Music" - grown on rich, fertile soil 10 years in the making.
Garlic available at your grocery is a "softneck" variety with a short shelf life, usually shipped to your location from California. When available, "hardneck" garlic is locally grown and typically priced at $15 to $20/lb. With hardneck, you can use less in a recipe with better aromatic and flavorful result than softneck.
The magnificent "Music" hardneck variety is the "garlic-lover's garlic" that chefs prize for its mild to medium-hot, non-bitter, true garlic flavor that doesn't disappear when prepared. It stores well "on the head" - or separated into cloves and refrigerated in your favorite EVOO. When a recipe calls for 2 to 3 cloves of garlic, a single clove of "Music" (seriously) provides the same abundant flavor. White-skinned with a blush of pinkish-purple, Music garlic has big easy to peel cloves and stores well for months when kept in a cool, dark, dry place to maximize its flavor.
Should it sprout in storage, have some fun. Separate the cloves and bury them 2-inches deep and six inches apart in the ground outdoors - or in a large pot indoors. Each clove of garlic produces an entire head. Fun!

Now, we've taken to it for its abundance of flavor and its health benefits - and don't forget its unique ability to ward off unwanted vampires. The World Health Organization recommends that one clove of raw garlic be eaten on a daily basis to promote physical well-being. Not sure I can deal with that recommendation but cooking with garlic is good for you. The compounds in garlic are antibacterial, anti-fungal, aid the circulation and digestive systems, boost the immune system, lower cholesterol and blood pressure, and help fight heart disease.
